No Kneed Bread

INGREDIENTS

  1. 3 cups bread flour
  2. 1 packet (2 1/4 teaspoon) instant yeast
  3. 1 1/4 teaspoon salt
  4. oil as needed
  5. 1 1/2 cup water

DIRECTIONS

  1. Mix dry ingredients in a bowl
  2. Add Water
  3. Mix till moist
  4. Let it sit for 12-20 hours – cover the bowl with a towel – keep the dough in a relatively warm area
  5. Dough should be very stringy in texture
  6. Keep the dough in the bowl: Lightly pat it and then fold it over (literally- fold it in half)
  7. Place a clean towel on the counter – put some wheat bran and flour (or just flour) on the towel (maybe 2 tablespoons total)
  8. put the loaf on top of the flour/wheat bran with the fold side down
  9. add some wheat bran/flour on top and then cover with the towel
  10. let the dough sit for 2-4 hours
  11. Preheat oven to 500 F and put a dutch oven (with top on) in the oven (empty)
  12. Plop the dough (minus the towel) into the dutch oven (first take off the top, then plop, then replace top)
  13. Cook for 30 min
  14. Take off the cover and cook for another 15-20 min
